Instant Pot Tacos al Pastor

Tacos al pastor, technically, cannot be made in your kitchen. Sorry. I don't mean to burst any bubbles here, but tacos al pastor are only made on a vertical spit. So, unless you're going to start running a Mexican taco stand or gyro shop out of your kitchen, that probably isn't happening. However, that is not to say you cannot enjoy the delicious flavors of crispy pork and fresh citrus in the comfort of your own home. Enter, the Instant Pot tacos al pastor.

A favorite street food of Mexico, tacos al pastor are always a combination of marinated pork, orange juice, cilantro, and pineapple. This recipe takes it up a notch and includes spicy and smoky chipotle chili peppers, Mexican oregano, and a good amount of garlic. Combined with the shredded pork and corn tortillas, it makes for a wonderful weekend meal.

Note: this is a more involved recipe than we sometimes post, but if you take the 90 minutes to make the pork, you won't be disappointed. Here's a suggestion: invite your box friends over, crack a few delicious drinks, and have a taco party. You won't even notice the time waiting for the pork to finish in the oven.

Instant Pot Tacos al Pastor Ingredients:

Marinade and Pork:

  • 3-4 Pound Pork Loin, cut into large chunks
  • 1 Bay Leaf
  • 1 T Mexican Oregano (or regular oregano)
  • 1 T Cumin
  • 1 Medium Onion, chopped
  • 1 Cup Fresh Pineapple, chopped
  • 1 Cup Fresh Orange Juice (if you have to get bottled, get one with lower sugar)
  • 3 Cloves Garlic
  • 1 Medium Jalapeno, chopped
  • 4 Chipotle Chilis in Adobo, chopped with sauce

For Serving:

  • Fresh Cilantro
  • Fresh White Onion
  • Chopped Jalapeno
  • Sliced Avocado
  • Limes & Hot Sauce
  • Corn Tortillas

Instant Pot Tacos al Pastor Steps:

  1. Combine the pork and all marinade ingredients in a large ziplock bag. Refrigerate at least 4 hours, and preferably overnight.
  2. After the pork is done marinating, add it and enough marinade to cover at least half of the pork to your Instant Pot. Set the Instant Pot to cook over high pressure for 90 minutes, and seal the lid.
  3. When the cooking is done, release the pressure, and set your oven to broil.
  4. In a large dish, shred the pork and place under the broiler until crispy.
  5. Serve in a large platter alongside the corn tortillas and other toppings!
